In this example, intended for non-Indians, he carefully explains how to properly cook the ingredients. For example, with onions, you have to cook over medium heat until they are small and yellow. Curry powder has to be slowed-cooked over a low flame too. I didn’t know this, so my katsu-curry didn’t turn out too good.
Obviously if you don’t eat meat, you can probably substitute chicken with mushroom and lentils (and/or tofu), Indian paneer, etc. The point here is how to make a basic curry and then use it to make other recipes.
